MANAGER'S MESSAGE

We have had a rollercoaster winter, but are very much looking forward to the Spring season and the warmer weather it brings!

I am excited to tell you about the transition the Club is moving toward. As you’ll notice, we have a different format for our Echo Newsletter; a format more interactive and easily readable, that is informative for not only our Members, but the community as well. We are implementing a brand new point of sale system for our departments that will consolidate every facet of operations, from Golf to Reservations to Accounting to Food & Beverage. This will allow all the departments to communicate more effectively and make the process smoother for our Members and guests.

We have made some personnel changes as well; Tracie McMillan is now heading up the Front Desk/Reservations department and assisting the Accounting department. Carolyn Plott is still the Membership Director, but has stepped up to assist the Reservations department during the slower months, and Richard Smith is heading up the Housekeeping department along with Jean Nations. We now have a culinary team heading up our Food & Beverage operations; Brad Brendell, working Chef, and Judy Martin-Muerdter, F&B Manager, are working together to come up with new and exciting menu options, as well as events and specials. Also, in our Accounting Department, we’ve added Maureen Crews, who has been a member of the East/West Partners family and whom I’ve had the pleasure of working with before. We have an excellent staff!

We’re all excited to kick off the season, and look forward to seeing you all soon! As always, please contact me with any questions or suggestions.

The Perfect Pairing

When it comes to food, Brad Brendell and Judy Muerdter have a taste for the finer things in life.

Brad has been in the food industry for over 20 years, classically trained in old world Italian and French influences. He’s spent the majority of his career in the resort industry, working in exclusive areas in Cashiers and Toxaway. He has also worked at the Swag, the Grove Park Inn and the Biltmore Estate.

Judy has had an illustrious career as the Owner/Operator of a number of successful restaurants in Montgomery, AL. She has worked with celebrities and heads of state, and has been featured in cookbooks and magazines, including Wine Spectator. She is also well-versed in many different types of wines. Her true passion, though, is cooking. She values fresh ingredients and doesn't skimp on the details, and it’s evident: fresh salsa with onions and cilantro, made-from-scratch soups, and fresh daily specials are just part of her take on what quality dining should be.

Together, they are working to reinvent the Pin High Bar & Grille, offering affordable options to “keep with the ever-changing trends and special dietary needs and requirements of today’s consumer market.” The focus more than ever will be on fresh ingredients, utilizing local farms and vendors and using our own vegetable gardens in the warmer season.

Dining Out for Life is an annual fundraising event benefiting the Western North Carolina AIDS Project (WNCAP).

Last year’s event raised over $119,000 in WNC and attracted 7,000 diners out for breakfast, lunch and dinner.

Participating restaurants will donate 20% of their gross proceeds to help WNCAP continue its’ mission throughout 19 counties of WNC.

FEATURED RECIPE

Mesclun Salad with Orange Sage Vinaigrette

(Mesclun is a salad consisting especially of young, tender mixed greens)


Serves 4. Preparation Time: 15 minutes
1 Tbsp. sugar
1 1/2 tsps. fresh sage
1 tsp. Kosher salt
1 tsp. cracked pepper
1/4 c. rice wine vinegar
1/4 c. orange juice concentrate
1c. olive oil
4 large handfuls Mesclun
Orange zest, garnish (optional)
Place sugar, sage, salt and pepper in small bowl. Add vinegar and whisk until incorporated. Add orange juice concentrate and slowly add olive oil and mix well. Taste for seasoning and adjust. Wash the Mesclun greens gently. Drain and spin dry. Place the greens in a salad bowl and toss with the vinaigrette. Garnish with orange zest.
